Stuffed Mini Peppers
Bright, colourful, and ready in minutes. You can follow the exact recipe below or feel free to substitute for other ingredients you may have on hand.
Ingredients
- 1 bag of mini sweet peppers
- 1 tub hummus of your choice (roasted red pepper, roasted garlic, lemon, caramelized onion and many more to choose from)
- Finely chopped fresh parsley, chives or cilantro
- Optional toppings: a dash of smoked paprika, or toasted sesame seeds or pine nuts
Steps
- Cut mini peppers in half lengthwise and remove any seeds
- Spoon hummus into each half pepper
- Garnish to your taste with your choice of chopped greens and/or nuts
- Arrange on a plate – and sprinkle with more chopped greens!
