Stuffed Mini Peppers 

Bright, colourful, and ready in minutes. You can follow the exact recipe below or feel free to substitute for other ingredients you may have on hand. 

Ingredients 

  • 1 bag of mini sweet peppers 
  • 1 tub hummus of your choice (roasted red pepper, roasted garlic, lemon, caramelized onion and many more to choose from) 
  • Finely chopped fresh parsley, chives or cilantro 
  • Optional toppings: a dash of smoked paprika, or toasted sesame seeds or pine nuts 

Steps 

  1. Cut mini peppers in half lengthwise and remove any seeds 
  2. Spoon hummus into each half pepper 
  3. Garnish to your taste with your choice of chopped greens and/or nuts 
  4. Arrange on a plate – and sprinkle with more chopped greens! 

Bonus
