Every plate of this pasta is proof that cruelty-free can be comforting and deeply satisfying. This pasta is 100% plant-based and surprisingly creamy, thanks to blended cashews or oat cream.
Ingredients:
- 250g pasta (penne or fusilli work well)
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 250g mushrooms, sliced
- 1 tsp thyme (dried or fresh)
- 100ml oat cream or blended soaked cashews
- 2 handfuls spinach
- Salt & pepper
- Nutritional yeast or vegan parmesan (optional)
Instructions:
- Cook pasta according to package instructions. Reserve ½ cup pasta water.
- In a pan, heat oil and sauté onion and garlic until soft.
- Add mushrooms and thyme, cook until golden and tender.
- Stir in oat cream and pasta water for a silky sauce.
- Toss in spinach and cooked pasta. Stir until spinach wilts.
- Season and top with nutritional yeast or vegan parmesan, if desired.
