Every plate of this pasta is proof that cruelty-free can be comforting and deeply satisfying. This pasta is 100% plant-based and surprisingly creamy, thanks to blended cashews or oat cream. 

Ingredients: 

  • 250g pasta (penne or fusilli work well) 
  • 1 tbsp olive oil 
  • 1 small onion, chopped 
  • 2 garlic cloves, minced 
  • 250g mushrooms, sliced 
  • 1 tsp thyme (dried or fresh) 
  • 100ml oat cream or blended soaked cashews 
  • 2 handfuls spinach 
  • Salt & pepper 
  • Nutritional yeast or vegan parmesan (optional) 

Instructions: 

  1. Cook pasta according to package instructions. Reserve ½ cup pasta water. 
  2. In a pan, heat oil and sauté onion and garlic until soft. 
  3. Add mushrooms and thyme, cook until golden and tender. 
  4. Stir in oat cream and pasta water for a silky sauce. 
  5. Toss in spinach and cooked pasta. Stir until spinach wilts. 
  6. Season and top with nutritional yeast or vegan parmesan, if desired. 

Bonus: Try swapping in different combinations of your favorites like sautéed courgette & sundried tomatoes or sautéed asparagus & kalamata olives.
