This recipe is versatile and couldn’t be easier to make. In my home I serve it as both an appetizer when entertaining and as a quick snack. Dress it up as much as you like, the options are endless to tailor this to your own tastes.
Ingredients:
- Bread (I choose sourdough, but you do you)
- 1 ripe avocado
- A few cherry tomatoes (or 1 large vine tomato)
- ½ lemon (juice only)
Method:
- Step 1: Toast your bread of choice.
- Step 2: Mash the avocado in a bowl and squeeze in the lemon juice.
- Step 3: Slice the tomato and layer it on top of the avocado.
- Step 4: Optional: be creative and add additional toppings of your choice from basic salt & pepper to basil, chili flakes, spring onion, a drizzle of balsamic dressing or vegan feta cheese in any combination.
BONUS: How to Tell if your Avocado is Ripe
Colour: Look for a darker green or nearly black skin (for Hass avocados). Bright green usually means underripe.
Feel: Gently press the avocado with your thumb:
- Too firm? Not ready yet.
- Soft but not mushy? Perfectly ripe.
- Very squishy or dented? Likely overripe inside.
Top test: Flick off the small brown stem cap:
- If it comes off easily and the flesh underneath is green, it’s ripe.
- If it’s brown underneath, it may be overripe.
- If the cap won’t budge, it’s not ready.
